Cronan Family Pumpkin Cheesecake

Ingredients:1/2 cup gingersnap crumbs 4 packets 8-ounce cream cheese 1/2 cup sugar 1/3 cup flour 2 teaspoons cinnamon 1 teaspoon nutmeg 1 teaspoon ground cloves 1/4 teaspoon spices pinch of salt 6 eggs 1 teaspoon vanilla 2 cups pureed pumpkin 1 cup whipped cream Directions:- Butter a cheesecake pan, sprinkle the bottom and edges with gingersnap crumbs, then chill.- Preheat oven to 325 degrees.- Beat cream cheese until fluffy.- Add sugar, flour and spices.- Add eggs, one at a time.- Add vanilla.- Fold in pumpkin puree.- Pour into pan.- Bake for 1 1/2 hours at 325 degrees.- Turn oven off and open door for 30 minutes.- Leave cheesecake in the pan, let cool and chill overnight.- Remove sides of the pan the next day, garnish with fresh whipped cream and enjoy!

Ingredients:1 loaf seedless rye bread, toasted and shredded 3 cups crumbled corn bread 1 onion and 3 stalks celery, diced and sauteed 1 package fresh mushrooms, sliced 4-6 cups chicken bouillon Directions:Mix first four ingredients together.

Chen Family Roasted Butternut Squash and Apple Soup

Ingredients:2 tablespoons unsalted butter 2 tablespoons olive oil 3 large onions (not red), chopped 1 large carrot, chopped 1 stalk celery, chopped 5 pounds butternut squash (2 large) 1 1/2 pounds sweet apples, such as McIntosh (about 4 apples) 2 cups low sodium chicken stock (about 1 can) 2 cups apple cider 1/4 cup half-and-half 1 bay leaf 4 sprigs fresh thyme salt and pepper as preferred fresh croutons (optional) Directions:- Preheat oven to 375 degrees.

Grandma Lyman's Scalloped Apples

Ingredients:6 baking apples, medium to large; peeled, cored and quartered 1/2 cup water 2 tablespoons sugar 1 tablespoon fresh lemon juice 2 tablespoons maple syrup (if you don't have maple syrup, just add more sugar) Directions:- Preheat oven to 350 degrees. - Place apples rounded-side up, in shallow baking dish. - Pour water, lemon juice, sugar and maple syrup over all the apples. - Bake uncovered for about one hour until apples are tender. - Enjoy!
