The Maltabes brothers, the owners of Hoagie Haven, will open up a pizza restaurant, "Slice Between," in the storefront next to the Hoagie Haven on Nassau Street by the end of May. The site was occupied by Old World Pizza until it closed down a few weeks ago.
Slice Between will be the third Nassau Street restaurant owned by a member of the Maltabes family; Niko Maltabes owns George’s Wings and Ribs, two doors down from Hoagie Haven.
The Daily Princetonian spoke with Hoagie Haven co-owner Costa Maltabes to discuss the acquisition, the potential opening dates and some familiar flavors from Hoagie Haven that will reappear in pizza form at Slice Between.
Q: Why are you opening a new location? What was the motivation?
A: We like giving good food to good people at a good price. We love dealing with our customers, and we want to deliver good value pizza to the Princeton University students, local high school students and townspeople.
Q: What are you going to do in terms of toppings for the pizzas? Could you give me an example of some crazy topping you were thinking of? Just to entice some of the students.
A: We are definitely going to be doing the crazy toppings that we do with our sandwiches at Hoagie Haven. Are you familiar with the Sanchez sandwich? There will be pizza with the Sanchez sandwich toppings.
Q: Are you worried about competition, in terms of entering the pizza market in Princeton?
A: Obviously there is a lot of competition with pizza stores in Princeton. I think there are plenty of customers to go around though. I’m not worried.
Q: What sort of similarities are you looking at between Hoagie Haven and Slice Between?
A: There will be a definite similarity between sandwiches and pizza toppings. We look to draw a similar crowd with good food at a good price. This crowd is mainly University and high school students.
Q: Will you sell things besides pizza?

A: We will sell pizza and salads and calzones. People can get sandwiches at Hoagie Haven and wings at George's.
Q: Any message you would like to get out to Princeton students?
A: Just that we have a big old chalkboard, and we want Princeton students to come sign it in our Hoagie Haven store.
Q: Do you have an estimated time for the grand opening of Slice Between?
A: We are looking to open right before Memorial Day weekend. We still have some things to sort out in order to make things smooth in the opening.
