After opening exclusively for lunch this semester, the Healthy Eating Lab has added dinner hours to its schedule. The Frist Campus Center eatery will now offer its lunchtime menu of sushi and spa salads from 5 to 8 p.m. Monday through Friday.
Richard Fishwick, a Culinary Institute of America-trained chef, is in charge of the dinner hours for the Healthy Eating Lab.
Fishwick said the response to the new hours has been positive, but that "the numbers have not been large, mostly because people have only known it to be open for lunch."
He said he hopes further publicity will better inform students about the expanded hours.
Overall, students have shown significant interest in the Healthy Eating Lab.
Jin-Hee Kim '07, who has enjoyed lunch from the lab several times this year, said that it has the best selection of sushi on campus.
